Serves 2-3 persons:
Ingredients:
- 1 can of tuna, drained
- 1 can of mixed beans (kidney beans, chickpeas, black beans), rinsed and drained
- 1/2 cup sweet corn kernels (fresh or canned)
- 1/2 red bell pepper, diced
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup chopped fresh parsley
- Optional: 2 tablespoons sunflower seeds
For dressing:
- 1/4 cup extra-virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the drained tuna, mixed beans, sweet corn, red bell pepper, cucumber, red onion, and parsley.
